Sweetcorn cake

Sweet corn kernels are pureed and added to this cake batter for an easy, delicious summertime treat.

Preparation time: 20mins
Cooking time: 60mins

Ingredients for 4 people:

– 125g of margarine
– 150g of sugar
– 3 eggs
– 1 lemon (zest and juice)
– 1 pinch of salt
– 1 small packet of vanilla flavoured sugar (13g)
– 150g of flour
– 1 small packet of baking powder (15g)
– 250g ground sweetcorn (polenta)
– 2.5dl of milk
– 2 or 3 apples


1. Work the margarine, sugar, eggs, lemon, salt and vanilla flavoured sugar into a mousse.
2. Add in the flour, baking powder, polenta and the milk.
3. Pour into a well greased cake tin then place the peeled and sliced apples on top, pushing them slightly into the mixture.
4. Cook for 55 to 60 minutes on the lower shelf of the oven, preheated to 180°c or 200°c.

Note: use a hinged cake tin measuring 24 to 26cm in diameter.
