Souvlaki (Greek traditional recipe)
This is excellent served with pita bread, a garlicky tzaziki and a crisp, green salad. The marinade can also be used with veal.

Ingredients:
1 lemon, juiced
1/4 cup olive oil
1/4 cup soy sauce
1 teaspoon dried oregano
3 cloves garlic, crushed
4 pounds tenderloin meat (lamb-beef-veal even a chicken) cut into 1 inch cubes

2 medium yellow onions, cut into 1 inch pieces
2 green bell peppers, cut into 1 inch pieces

Directions:
1.In a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic; add meat, onions, and green peppers, and stir to coat.
2. Cover, and refrigerate for 2 to 3 hours.
Preheat grill for medium-high heat. Thread meat, peppers, and onions onto skewers.
3.Lightly oil grate.
Cook for 10 to 15 minutes, or to desired doneness, turning skewers frequently for even cooking
