Masala chips/ Masala fries
This was an exciting treat for my hubbie and I. He had never had masala chips and I could sort of remember that it was a regular treat from days gone by. You see in Kenya and all of former British territories, chips refers to fries. Masala refers to a blend of spices.

So imagine that, fries cooked in an assortment of spices. How Delicious!
You could use fries from the frozen section in the supermarket or make your own fries at home. You could also use tomatoes and chili powder or chilies or use chili sauce. It really depends on how much time you have and how long you want to be in the kitchen. I found that the chili sauce works pretty well and gives a great flavour.

 

  • To make fries/chips
  • 3 large potatoes, peeled, sliced lengthwise
  • vegetable oil about 1/4 of pot
  • To make the masala
  • 1 Tbsp vegetable oil
  • 1 onion, chopped
  • 1-2 cups chili sauce
  • 1 tsp garlic
  • 1/2 tsp salt
  • 1/2 cup chopped coriander/ dhania

 

 

  1. In a fryer or large pot heat oil to about 350ºF, place sliced potatoes in oil.
  2. Fry until cooked.
  3. Place aside.
  4. Meanwhile in a skillet cook onion until translucent, add chili sauce stirring until bubbling slightly. Add garlic, salt and coriander. Cook for about 5 minutes and your masala sauce is ready.
  5. Add cooked fries and stir. Your masala chips are ready to serve. Enjoy!
