Fettuccine with Green Pepper and Coriander

A wonderfully unique pasta dish, which uses typical ingredients to come up with new and exciting flavours. You can use fettuccine as stated, but spaghetti or even penne work a treat.

Main ingredients: fettucine, green peppers, coriander
Time of preparation: 15 minutes
Time of cooking: 30 minutes
Serving: 5

1 pack fettuccine, (500 g)
2 tbsp butter
3 tbsp vegetable oil
3 cups coriander, chopped
4 green peppers, meduim size
2 tsp garlic, crushed
1/2 cup lemon juice
Salt and pepper

1. Slice peppers then cut each ring into 2-3 pieces or cut into sticks, then cut each stick in half.

2. Boil fettucine and drain.

3. Just before fettucine is done, melt butter with oil in a deep pan over high heat.

4. Add peppers to pan stirring occasionally for 5-7 minutes until they start to fade. Add garlic and continue stirring for another minute. Add chopped coriander and stir until coriander fades (1/2 minute).

5. Add fettucine, salt and pepper. Stir all ingredients together for about 1 minute then take off heat. Add lemon juice. Adjust salt and lemon seasoning. Serve right away in a flat dish.
