Treat Yo Self: Chocolate Dipped Ice Cream Cookie Sandwich…on a Stick

You can customize this to your tastes and make a different sort of cookie. (Or use storebought. No judgments.) Use milk chocolate or use a different kind of ice cream. It’s your treat. Do what you wanna do.

Chocolate Dipped Ice Cream Cookie Sandwich…on a Stick

Makes 9

  • 1 ¼ cup flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup butter, softened
  • ¾ cup brown sugar
  • ½ cup sugar
  • 1 egg
  • ½ tsp vanilla
  • 1 cup dark chocolate chips (I used Ghirardelli)

Method :

Preheat the oven to 350 degrees. Mix butter, sugars, egg and vanilla together in one bowl and flour, baking soda, baking powder and salt in another. Then combine it all together and fold in chocolate chips. Scoop cookies out with a cookie scoop onto parchment paper lined pans and bake for 12-14 minutes. Cool to room temperature.

Ok, for assembly you will need:

Popsicle sticks (I used craft sticks, because I’m crafty)

Softened ice cream (I used vanilla frozen yogurt)

Dark chocolate for melting, along with a teaspoon of oil (I used coconut oil)

Nuts, sea salt, coconut or sprinkles for optional topping

Sandwich it.

Freeze it.

Dip it.

Melt your chocolate & tsp of oil using a double boiler & carefully dip the cookie sandwich in there.

Immediately after dipping, add toppings like nuts, coconut, sprinkles or sea salt.

*best picture ever, I know*

Freeze it.

Eat it.
The chocolate might crack a little, but just hold on tight to it.

In case you need another incentive to make and eat this treat, remember that it is county fair season. What better way to celebrate than making food on a stick?!
