Baked Mexican Rice

This rice dish is top quality and dare I say, better than any rice you’d find in a Mexican restaurant.


  • 2 cups cooked rice
  • 2 cups cream of chicken soup
  • 1 small can chopped green chilies
  • 1/2 cup shredded red cheddar cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • extra shredded cheddar cheese


1. Mix together first 8 ingredients.
2. Spoon mixture into a greased 1 1/2 quart baking dish.
3. Bake uncovered at 160 degrees for 20 minutes.
4. Top with cheese. Bake an additional 5 minutes.

* Great to serve with any of your favorite mexican dishes! If you have any grilled chicken, cube it up, and mix it in there for an all in one dish!
